Karela Fry

With the weather getting cooler, taste buds crave for spicy, fatty and crunchy foods. Karela\Bitter Gourd is one vegetable that I doubt anybody as a child is very fond of, but as adults many began to relish the bitter, bold taste. Here is a dish which is simple and easy.



Ingredients :-
  • 4 Bitter gourds
  • 1+ tsp Cumin seeds
  • 1 - 1.5 tsp amchur\dry mango powder
  • 2 tsp red chilli powder
  • 1 tsp turmeric
  • 1 tsp coriender powder
  • 1/2 tsp garam masala
  • oil (I used olive oil here, and quite 'some' amount! just enough for the bittergourd to cook crisp)
  • salt

Method:-
  1. Thinly slice and de-seed bittergourd, of about 1 inch in length.
  2. Heat about 4-5 tsp oil.
  3. When heated add cumin, and as cumin sputters add red chili powder and turmeric.
  4. Next add the bittergourd.
  5. Saute for 5 mins, when the slices look soft add to this amchur, coriender and garam masala powders.
  6. Continue to saute for another 10-15 mins.
  7. As the gourd slightly blackens and feels crisp. Turn off flame and add salt to taste.
