Beans Sabzi

This one is super simple, easy and is ready in a jiffy. Now a days I'm opting for quick cooking dishes so this and Karela Fry took about 45mins  start to finish, taking into the amount it takes to chop these two items.

Ingredients :-
  • 1/2 pound chopped beans
  • 1/2 tsp mustard seeds
  • 1/2 -1 tsp ajwain\caroway seeds
  • 1-2 greens chilies
  • 1 tsp turmeric
  • 1 tsp coconut powder (optional)
  • oil
  • salt

Method:-
  1. Heat about 2-3 tsp oil.
  2. When heated add mustard seeds to sputter.
  3. Then add ajwain and chilies.
  4. Once the chillies get a bit roasted, add the beans.
  5. Saute and cover with lid.
  6. Keep checking and mix until beans is cooked.
  7. When done, turn off flame and add salt to taste.
  8. Garnish with coconut powder.

Beetroot Sabzi

Ingredients :-

  • 1 Beetroot + 3 bunches of Beetroot leaves
  • 3-4 green chillies
  • 1 tomato
  • 1/2 onion
  • 1 tsp cumin seeds
  • 1+ tsp mustard
  • hing (asafoetida)
  • 1 sprig curry leaf
  • oil
Method:-
  1. Heat about 2-3 tsp oil.
  2. When heated add mustard, cumin, slit green chillies and curry leaf to sputter.
  3. Next saute chopped onions.
  4. To this add chopped beets(peeled) and greens.
  5. Cover and let cook for 5-8mins.
  6. Add chopped tomato and cover.
  7. Cook as per desired, I cooked them very light such that it retained some crunch. You may also add some water if you please to soften the beetroot.
  8. Finally sprinkle 1/4 tsp hing, stir and turn off heat.
  9. I have not added any salt, since I wanted to taste the sweet from beets and bitter from leaves, you may add salt as needed.
